Cherry Winter Quinoa Porridge
Breakfast is served…This is indeed one of my faves to have in the AM. It’s packed with nutrition and keeps you really full. Not that fake full you feel after you eat junk food. Most would think of having quinoa as a lunch or dinner meal but it’s totes meant for breaky too!
Let’s get to know Quinoa a bit. Quinoa is looked at as a grain, prepared as one too. However it is really a seed! Yes a seed indeed. How interesting right! So this magical food is probably one of the best ways a vegetarian, vegan or plant based lifer like myself, can get that protein. Yup that’s right protein. This superfood is packed with it and I believe it has more protein than a 4 ounce piece of chicken. And this whole hype on protein is so 1998. The daily intake of protein should only be about 20% of what your eating in a day. You can actually get sick from too much protein intake. A lot of people I come across are consumed by this thought that the more protein the better. That’s not the case. Do we need protein, yes. Do all our meals need to contain 36g of protein…um I’m going to say probably not.
Ok enough about my rant on protein. I do love it, lol so here is a good way to start the day with a kick of energy that will not leave you crashing around noon.
2 c almond milk
1 c tricolor quinoa
1 tbsp maple syrup
1 tsp vanilla extract
1/4 c coconut milk yogurt
1/3 c cherries and or blueberries
- Bring almond milk and quinoa to a boil then cover and simmer for 15 minutes until liquid is absorbed.
- Pour in maple syrup, vanilla extract and mix well.
- You can prepare this in a bowl or make it a parfait as I did.
- Layer accordingly. Quinoa, yogurt, cherries and blueberries.
