No better way to beat the heat than with something cool right?! Like saaay…popsicles? Well duuuh of course popsicles are the way! (at least one of the ways) But anywho these Very Berry Coconut Popsicles are a must make. They take all the effort of basically doing a whole lotta nada. And they look so purdy.

Before we get into the goodness of this recipe and how super easy it is I want to give you an update on what I’ve been doing these past couple of weeks. As you know from my last post I am now a college student (thank you, thank you very much) and I also do a lot of reading on blogging and food photography as I’m self taught. I absolutely love beautiful food photos. When I see a mouth watering pic, I want to literally eat it off my screen. I know not the daintiest of actions but we all do it so don’t judge me.

I have tons and tons of resources that I turn to and countless books I’ve read and continue to add to my collection. When I starting taking photos of food it was all done for Instagram.  At that time I referred to myself as “just a mom with a camera phone”. I often wondered, how in the world do other instagrammer/bloggers get their photos to look so gorgeous and appetizing. Then food photography came in and I fell in love with it immediately and knew it was something I wanted to pursue.

I just recently joined Food Photography School created by Dana Shultz of MinimalistBaker and let me just tell you, holy information where have you been this whole time! These lessons were down to earth, the step by step tutorials were on point and it didn’t leave me feeling overwhelmed. I’ve been taking food photos with a DSLR camera for a little over a year now and I’m just starting to get it. Actually I think I may have got it completely after these courses.

I need to see something to really absorb it. Of course I took notes and things like that but I am a very visual person. It registers well when I see it being done. I don’t know if any of you are like that but it works for me. So these courses walk you through camera basics, angles, how to set up a shot, props, editing, do’s and don’ts, the whole process of a shoot basically from start to finish including tech stuff . See these photos? These photos were taken using all the tips I’ve learned from Food Photography School. I’d say it took my photos from like a 6 to a 20. There is still tons to learn but practice makes perfect. So I just practice and hit up my notes because the camera ain’t gonna do the work for me is basically what it comes down to. And it sucks every time having a shoot come up, I would normally get anxious and think oh sweet lawd I hope I get some good shots. Now I know my shoots will be good and less frustrating. (Phew, headswipe)

I don’t mean to toot my own horn here but these popsicle photos totes rock. And I’m happy I joined Food Photography School. If you’re an aspiring food blogger and long to create beautiful photos and step up your game I highly suggest taking this course(s). Like for reals. It’s inexpensive and there is a boatload of info.

Ok back to these refreshers. I make these all the time and my son who I call Nugs, loves them. You can use any fruit you fancy. I used fresh raspberries then frozen blueberries and blackberries because it’s what I had in the fridge and freezer. Plus they just scream healthy but look totally sinful. (gasps and covers mouth)

Popsicles sold in stores are full of crap. I kid you not. There are ingredients in most of them that would take me a lifetime to learn to pronounce. Who needs that, right?! It’s like reading palkjaoufkejfoaeur. And I’m all like yea, that’s a negative.

What you’ll need is 5 minutes of your time, either coconut water, maple water or even regular water with mixed berries of your choice. Oh and some freeze time but you can deal with that. It doesn’t require much just some good ole waiting patiently. Ok I guess that can be hard too when you really want something but I have faith you’ll pull through.
