How many times have you walked passed radishes in the supermarket not thinking that those little gems are much more than just a salad garnish? I almost always never pick up radishes, they were always meh to me until this happened…

Sometimes I like to go easy on my carb intake. I mean I’ll never give up carbs completely but sometimes I need to pull back the reins a bit. Eating potatoes is a regular thing for me. I make cheese wiz out of potatoes and then I top fries (more potatoes) or veggies with that cheese wiz. So on my venture of not eating a gazillion potatoes I wondered what could give me the same satisfaction as eating potatoes with zero to no carbs. Enter Roasted Radishes and this is The Potato Sub You’ve Been Looking For. And me too obvi. Radishes are THE root vegetable you want to munch on when you’re looking to go low carb (or vegan keto).

The French are known to eat their radishes raw with butter. I say hell yes to that (with vegan butter of course, this vegan butter is my fave). I came across a thread on Facebook that talked about roasted radishes as a potato sub and I was intrigued. This little ruby looking mini parsnip thing could taste like a baked potato? Like seriously? I gave it a go and OH.EM.TO.THE.MOTHER.EFFIN.G…AH-MAZING! It’s everything you look for in a potato and even more and by more I mean because it takes like 10 radishes to equal 1 freakin’ carb! I swear after writing that sentence I pictured Oprah saying to the crowd “And you get some radishes and you get some radishes!” hahahaha. The crowd is literally going wild I can just feel it.

You know when you eat something you know is super good for you but while you’re inhaling said food, you stop and almost feel guilty about it? Like “Damn I need to stop”. Well with roasted radishes you need not let that happen. Your brain may think you’re eating a potato but you’ll be fooling it with these beauties. I never knew radishes had so much potential. I’m wondering how far I can take my new radish obsession. But for right now I think I’ll stick to this because I literally can’t get enough.

And the big bonus is my 6 year old absolutely loves them too! He was like “Mom what is this?” and I was all like “Why, is it good?” and he was all like “Yea, I really like this, it taste like a potato!” then I was all like “Score!”. On the inside of course. I couldn’t let him see the win. LOL

Besides them being super low carb radishes come jam packed with nutrients. They are extremely good for the stomach and liver as they are a powerful detoxifier. Radishes help to eliminate toxins and waste and purify the blood much like onions do. They are one of the best vegetables for the digestive and excretory system. And since radishes are diuretic by nature, they help clean out the kidneys thus reducing urinary infections.

Amazing for weightloss, since they are low indigestible carbohydrates, high in fiber, and contain a lot of water, these tubers are true gems for shedding the pounds. This keeps things in your system moving along and regular because it flushes out the toxins.

Radishes can also regulate blood pressure, relieve congestion, and prevent respiratory problems such as asthma or bronchitis. They have antibacterial, antifungal, and detoxifying properties, and contain compounds that soothe rashes, dryness, and other skin disorders.

They are one of the highest sources of vitamin C out there. I know right, who knew!? They make up 25% of the daily requirement.

Ingredients:

  • 2 bunches of radishes, about 20
  • 1 tbsp avocado oil or vegan butter (melted)
  • salt/pepper to taste

Directions:

  1. Preheat oven to 350F and line baking sheet with parchment paper.
  2. Cut radishes in half and spread out on the baking dish.
  3. Drizzle on the avocado oil or melted butter, coating the radishes evenly.
  4. Sprinkle with salt and pepper, mix around then let it bake for 20-25 minutes or until fork tender.
  5. Remove from oven and enjoy right away.
