Creamy Coconut Chia Pudding

This is a very simple and adaptable recipe for chia seed pudding. It's ingredients are so versatile you can adjust and make it however you like. But I say try this dreamy coconut version first because it will give you all the delicious feels.
- 1 15oz full fat coconut milk or cream
- 1/4 cups chia seeds,, white or black
- 1/4 cup shredded unsweetened coconut
- 1 tbsp monkfruit sweetener, , or any keto friendly sweetener you use choose
- 1 tsp vanilla extract
- 1 tsp coconut extract
- 1/4-1/2 cup raspberries to top,, per serving
- cinnamon to top
Add all ingredients to a large bowl or jar and mix well. Cover and place in the fridge for at least 4 hours or overnight.
When ready to serve, top with extra shredded coconut, raspberries, and a sprinkle of cinnamon. Enjoy!
- Can add 1 tbsp of psyllium husk to this recipe for extra fiber.
- Can sub sweetener for any sweetener of choice like maple syrup but remember if following a keto diet maple syrup is a no no. You can however use a maple flavored syrup that is keto friendly like this one.
