Who thought those were scrambled eggs? Whelp you’re totally wrong on the egg part but totally right on the scramble part. Tofu Scramble anyone? Yes please!
You can always switch it up in the mornings. There are so many options from oatmeal to quinoa porridge to something like this. I love adding veggies to my plate any chance I get (which is always) so when I make this I think the greener the better.
Firm tofu – drained (you can use the whole container or just half)
1 tomato, chopped
1 c mushrooms, sliced
handful of scallions
salt/pepper/parsley to taste
onion/garlic powder to taste
1/4 tsp turmeric
spinach, as much as you want
kale, as much as you want
vegan shredded mozzerella (optional)
- Take tofu and mush it with your hands over a pan.
- Let it get warm and add in all the seasonings.
- You can put your veggies in the pan too so they wilt a bit or leave them out and add them in when the tofu is done.
- Have it with toast, coffee or tea but most of all…Enjoy!
