Strawberry & Banana Porridge

PorridgeSBMorning cuddles and snuggles with a bowl as yum as this. (Girl right!) When I put the strawberries and bananas in this bowl I swear I heard them singing “Reunited and it feels so good”. I thought to myself oh yes it does, oh.yes.it.does.

It’s like one of those coffee commercials you see when the person wakes up and does a nice long stretch, while the sun is brightly beaming in on them thus making them look effortlessly fabulous. Uuum totes not the case with me but don’t get me wrong I may have not looked super glam stretching this morning but I was definitely feeling like I was.

This is such a simple thing to make. When people hear quinoa porridge they are like WTF(flip) is that? I’m like “A-Duuuh it’s deliciousness, hellooo!”

By the way am I suppose to be writing extremely long descriptions to my blog posts? Hmph. Something to ponder for now. Until then we can get down to business.

Ingredients

1 c quinoa

2 c almond milk

2 tsp vanilla extract

1 tbsp maple syrup

1 banana, sliced

5-6 strawberries, sliced

handful of crushed walnuts

1 tbsp rolled oats (for the heck of it)

1/4 c of your favorite yogurt (I use a coconut milk based yogurt)

Method

  1. Pour almond milk in a sauce pan on medium to low heat and let it get to just about a boil.
  2. Add in the quinoa (be sure to rinse and drain first), bring to a boil again then let simmer for 15 minutes, covered or until the milk is fully absorbed.
  3. Pour in vanilla extract and maple syrup.
  4. Once done transfer to a bowl and place all fruits, nuts and yogurt on top.
  5. Eat with a big spoon!
  6. Enjoy!
