Asparagus & Arugula Tartines
Don’t you just love open faced veggie sandwiches? If so raise your hand so absolutely no one can see you…hahaha. Around my way, diner food is a big thing. I know I know, not so healthy for you but it is what it is around here ya know (shoulder shrug). Anyway, this reminds me of something you would, maybe see at a diner, just the healthier version.
The vegetables are warm, the bread is hot and it’s like perfect for lunch. (AH-Maze!) And it’s quite simple too. Not a lot of fuss and muss in the kitchen. I usually clean my fresh veggies right away when I buy them so if you have to clean some veggies, no big deal. It will only take you a couple of extra minutes. But look at how green it is! I mean the greener the better, Amirite? (Italian accent). You can use any bread you want but I prefer an organic, fresh sliced bread from WholeFoods or something like that. If not you just go with your own personal preference.
Ingredients
bread of choice (I used an organic whole wheat sourdough, totes yum!)
1 c or more of fresh arugula
1 avocado
1 lb or 1 bag of asparagus, steamed
2 garlic cloves, sliced thin
handful of pine nuts
salt/pepper to taste
1-2 tbsp extra virgin olive oil
Method
- Steam asparagus for about 10 minutes.
- Toast bread to your liking.
- Mash avocado and spread it across your toast.
- Add on arugula, garlic, pine nuts and asparagus.
- Sprinkle with salt, pepper and drizzle with extra virgin olive oil.
- Enjoy!
