When on the Ketogenic Diet it’s all about the healthy fats. For me, avocados and peanut butter are like my go to for that because clearly I love them both. My last post, the Lava Cakes, were all about peanut butter and chocolate too so I think it’s obvious where my healthy cravings lead.

My favorite dark chocolate lately that’s super keto friendly is Lily’s Dark Chocolate Coconut or Almond. Like OMG so freakin’ good. Or you can use this one from Lakanto both companies make equally delicious chocolate so go buy it all. LOL, just kidding, or am I?

I use an organic all natural salted creamy peanut butter from Trader Joe’s because you need the salt when you’re on Keto. I get the ripest avocados I can find and will eat this about once a day. Depending on my other meals, I’ll either have the whole avocado or split it with my sons and hubs. When I make this we all eat one anyway because they’re so much fun and so good. Plus super healthy too for after an school snack.

My kids go to a nut free school so I can’t pack anything like this for lunch, which is ok they just eat it when they’re home.

If you can’t do peanut butter you can totes do Almond Butter or Sun Butter! Honestly any nut butter would be great. I even tried it with Cashew Butter and my tastebuds dropped it like it’s hot. Like seriously, I think they had a dance off of deliciousness. haha

And there’s really nothing else to it except it’s a secret little gem that no one really talks about. Stuffing avocados is nothing new, people do it all the time but I hardly see it dressed up in this fashion. It deserves the spotlight, don’t you think!

I did see someone stuff an avocado with peanut butter then topped it with everything bagel seasoning from Trader Joe’s or sesame seeds. I mean do what you’d like but I love all these flavors together because it’s a dessert to me. Can’t wait to hear what you guys think – I hope you love it just as much as I do…Enjoy!

Peanut Butter Chocolate Stuffed Avocado

This is for the lazy gal who wants to make a mousse or chocolate pudding but also A. doesn't have the time or B. Just doesn't want to do it. You get the best of all three worlds this way: Chocolate, Salt, and Fats!

Ingredients

  • 1 avocado cut in half
  • 1/2 tbsp creamy peanut butter per each half
  • 2 squares of dark chocolate of choice to top, per each half

Instructions

  1. Cut avocado in half and carefully remove the pit

  2. Dollop 1/2 tbsp of peanut butter into each center and top with two squares of dark chocolate per half.

  3. Stick a spoon in it, dig in and Enjoy!

Recipe Notes

  • Can sub peanut butter for any nut butter of choice.
