Vegan Coquito
jump to recipeIt is that time of year my friends, it is that time of year. You must be wondering, what is Coquito? Coquito is a Puerto Rican egg nog-like alcoholic beverage that is made specially for the holidays. And how do I know about this drink? Well, I’m half Puerto Rican and have been making this for most of my adult life. It’s sweet, thick, creamy, and was probably one of my fave beverages growing up…in my twenties of course. 😉
Traditional coquito is made up of sweetened condensed milk, evaporated milk, egg yolks, coconut (like coco lopez), with spices like vanilla, nutmeg, cinnamon, and cloves. This galant of ingredients makes one hell of a drink and depending on who makes it and how heavy handed they are with the rum, could put you on your ass if you drink too much. But it’s sooo worth it.
Before I became plant based I made my coquito every year and use to sell them by the bottle, 20 bucks a pop. One person at a time would put in an order of at least 10 bottles. It’s a great Christmas gift and looks super fancy in a nice wine bottle or a clear rum bottle. Tie a bow around it and it’s good to go. Every year my kitchen would be loaded with cans of condensed milk, evaporated milk, rum, and coco lopez. I’m very heavy handed with the alcohol so I would not only add regular rum but I would also add 151, which is one of the strongest rums out there. One shot of that and night night, lol 😴.

There are slightly different ways to make this…slightly. There are things that people do a little differently when making this drink. How you make is how you were taught growing up. Some people used eggs, some people didn’t. Some people used eggs but didn’t cook them and just added them in raw. Others would heat it up to cook the eggs while others did not. Every family has their own traditions, but overall the taste is what keeps people coming back for more. Bottles of coquito around my hood are popular and if you happen to get your hands on one you’re considered lucky and you’ll want one every single year, guaranteed. This drink is that good and like gold because not everyone can just whip up a bottle. You gotta have the skills. Skills in which you’ll acquire after reading this post.
If you tell a Puerto Rican that you’ve made vegan coquito, they just may roll their eyes at you. But it ain’t no fun if my vegans can’t have none, right?! 😂 I don’t drink condensed milk, or evaporated milk and I need this drink in my life almost every year. It’s such a cozy drink. Had a long day at work, or have been running around crazy doing last minute shopping (guilty)? Then a nice glass of this to top off your day will distress you. Of course alcohol has something to do with it too. Now you guys know I’m not a drinker, I did all that in my twenties. But on occasion I do have a glass of wine, a beer, and now a nice glass of vegan coquito. I know what “the real thing” tastes like, I know how to make “the real thing”, so after mastering the vegan version, I’m pretty excited and love the outcome and I know you will too. Especially if you’re a Puerto Rican vegan. haha. All is not lost! But this is a drink for everyone, vegans or non vegans alike.
The trick here is making sweetened condensed coconut milk. And yes there is a way and it’s super easy. This is a standard size batch, good for one family. And I say family because you can leave some out for the kids before you add the alcohol. You can always double or triple the recipe to make more. Once you get the hang of it, it’s super easy and you’ll be making it all the time.
Get two 15oz cans of full fat coconut milk. They do not have to be refrigerated for this. In a medium to large sauce pan bring the coconut milk and 1 and a 1/2 cups of maple syrup to a boil. Some people use regular sugar but maple syrup doesn’t affect the flavor or texture at all. This is where it becomes sweetened. Once you have it at a boil reduce it down to a simmer and stir consistently. You’ll need to do this for 25 to 30 minutes. While it’s simmering add in all the spices,vanilla, nutmeg, cinnamon, and cloves (measurements in recipe below), and just let it simmer. You’ll notice it will reduce a little and also thicken.
After 25 to 30 minutes, remove it from heat, pour into a jar and store it in the fridge so it cools. It will thicken up more and become super creamy once cold. When it’s completely cooled remove that from the fridge and take an additional can of coconut milk (stored at room temp), 2-3 tsp of coconut extract, 2 tsp of vanilla extract, chia egg (1 tbsp chia seeds, 3 tbsp water), and add it all to a blender with your prepared condensed coconut milk. You can adjust the spices to your liking. I always add more of each but I go light with the cloves because they have a really strong essence and I wan’t the flavors to be even. Although adding a lot more cinnamon won’t do any harm. Now here’s where you add the alcohol! Yaaay for adults and our drinking, lol. I add about 1 cup of rum but feel free to add more or less. Be sure to taste it if you’re adding more, you don’t want it to be too strong where it’s uncomfortable to drink and starts putting hair on your chest. Straight white rum will do the trick or you can be brave and add one shot of 151 on top of that 1 cup of white rum. It will keep ya warm in the winter, that’s for sure.
The coconut flavor tends to mask the alcohol a lot at first, but once it settles in the fridge, the alcohol will become more prominent, so go easy my friends. Now that you have it all together place it in jars or one big jar and store it in the fridge to chill more. Completely cold and served over ice is the best way to enjoy this decedent beverage.
Ok so now you know the secret behind vegan coquito. Yes I know I know it’s brilliant. After all, the whole essence of this drink is coconut and rum. It’s the texture you want to get just right, not foamy but thick, sweet, and creamy, which is totally accomplished. So Feliz Navidad fellow vegans and plant based foodies…and welcome Coquito. 💃
Vegan Coquito
Ingredients:
- 3 15 oz cans of full fat coconut milk, room temperature, divided
- 1 1/2 cup maple syrup
- 2 tsp vanilla extract
- 2 tsp nutmeg
- 2 tsp cinnamon
- 1 tsp cloves
- 1 cup white rum
- 2-3 tsp coconut extract
- 1 chia egg (1 tbsp chia seeds, 3 tbsp water mixed together)
- handful of coconut flakes (optional)
- cinnamon sticks (optional)
Directions:
Making Condensed Coconut Milk
- In a medium to large sauce pan bring 2 cans coconut milk and maple syrup to a boil. Once boiling, reduce heat and simmer for 25 to 30 minutes, stirring constantly.
- Add in all the spices, vanilla extract, cinnamon, nutmeg, and cloves. Keep stirring, you will notice it reduce and will start to thicken. Keep in mind it will not be super duper thick, just thicker.
- After 30 minutes, remove from heat, place in a jar, and store it in the fridge to let it completely cool.
Putting it all together - The Coquito
- When your condensed milk is cool place in a blender and add an additional can of coconut milk, the chia egg (1 tbsp chia seeds, 3 tbsp water), followed by coconut extract, another tsp of vanilla extract, and the rum. Blend until the chia seeds are all ground up and it's creamy.
- Taste it as you go and add more spices as needed. By this point usually I add a pinch of everything, nutmeg, cinnamon and Cloves. I more so add cinnamon the most. Cloves can dominate the flavor if too much is added so go easy with that. You can add shredded coconut or coconut flakes too.
- Place your coquito in an air tight container like a glass jar and store it in the fridge.
- Cinnamon sticks are good to add more flavor and to stir while drinking.
- Shake well before serving.
- It is best served cold, in a rocks glass over ice. Enjoy!
- Chill time is not included in the prep time. Chill times vary. Be sure the condensed milk is cold when moving to the next step, this insures it's consistency in thickness.
- You can sub the additional can of coconut milk with vanilla almond milk.

My condensed milk also turned very brown when I put the spices in during the cooking stage, but lighted up considerably when I put the 3rd can of coconut milk in and blended. So don’t despair if yours turns brown too. I also cut back to 1 cup maple syrup and it was plenty sweet. Delicious! Thank you! I can’t tolerate dairy anymore and miss eggnog, and plant-based nogs don’t really cut it. This scratched the itch but embraces the coconut flavor! Love it!

Are your chia seeds ground before you add them to the blender? I have a Ninja blender but when I have added whole chia seeds to smoothies, they never grind up completely. Thanks!
Hi Emily, I use whole chia seeds but they grind up in my blender. Maybe try grinding them a bit first then adding them. Keep me posted! 🙂
So first of all – this tasted fabulous! And I live on St. Croix so I know what good Coquito tastes like. 😉 I didn’t have a grinder so I didn’t have a way to grind the chia seeds before putting them in the blender and unfortunately, they did not blend up. I let the bottle sit in the fridge overnight, hoping after they soaked up some of the liquid they would be softer, but after blending on high speed again, they still were not blended. I ended up straining them out and the Coquito was still plenty thick. Next year, I’ll try and find ground chia seeds. Thanks!

It lasts about a week. However, I know of a few people who have kept it frozen. Not sure on the feedback from them though. Let me know what you decide to do or what works out best. 🙂

I made this last year for thanksgiving. It was a huge hit with my Puerto Rican friends who were shocked that I was vegan.
I would like to clarify how much maple syrup? The recipe and the blog say 1 and 1/2 cups. The last comment was someone say it’s only 1/2 cup.
I have never had Coquito but due to food allergies will miss my favourite eggnog. I’d like to give this a try.
It’s one and a half cups but you can lessen it to 1 cup if you’d like.
Don’t make the same mistake I did! it’s only 1/2 cup maple syrup, not 1 & 1/2 (I misread the
1 1/2 cup).
As you can imagine, mine came out too sweet, but that’s my fault. However, it was still yummy (albeit quite dark). Everyone still liked it. I omitted the nutmeg.
Also I used only 1/2 tsp ground cloves, originally I was going to use whole gloves, but figured that couldn’t be right (it’s not clear which to use)

Yes, the chia egg gives it it’s thickness.

You can add the rum while its all in the blender then put it in the fridge.
No eggs in coquito !!! Nor do you need nutmeg or cloves. That is coconut flavored eggnog.
Hi Ivia, growing up and coming from a Puerto Rican family this is how they make Coquito. It’s a well known fact that recipes are made differently throughout families in every culture. Always nutmeg and or cloves. This doesn’t take away from the coconut flavor at all, in fact it adds to it!
Hi- Just made this tonight. I used Vanilla almond milk ( same amount as can) instead of the extra can of coconut milk. Its not very thick. Will it thicken in the fridge? Also the chia seeds will not completely dissolve. Should I blend again tomorrow after sitting overnight?

Hi Vanessa, did you simmer the initial coconut milk on the stove for the time allotted? That part is crucial. Also the chia seeds should have blended up in your blender. Try blending it up again. It will thicken as it cools. Also note almond milk is on the thinner side. Keep me posted.

I made vegan coquito for my vegan daughter at Christmas
. I wasn’t aware there was a recipe so I made my own quite similar to this but I used agave nectar as maple syrup did not occur to me. I will try it with the syrup and decide which I like best. My daughter loved it and insisted on another batch for New Years.

It does thicken up in the fridge but shouldn’t be rock hard. Try putting it back in the blender and adding some almond milk.

Yes, you can use coco lopez but that’s really just for flavor not for thickness. The condensed coconut milk makes it thick. Keep me posted on the turnout!

Your recipe for the condensed coconut milk calls for two 15. oz cans of coconut milk and 12 oz of maple syrup in which that equals 42 oz. However, I see in one of your responses you said it makes 1 1/2 cups. That doesn’t sound right? Was I suppose to boil it for 25 minutes? I brought it to a boil and then turned down to a simmer for 25 minutes. I ended up with 32 oz of the condensed milk.

Oh shoot it should be 3 1/2 cups, thanks for bringing that to my attention. When you bring it to a boil first then simmer it for up to 30 minutes, during that time some of the milk evaporates making it less than when you started. So you want to take your condensed milk and follow the rest of the recipe as written or you can use the condensed milk for other recipes!

I made this for the first time yesterday for my vegan niece and it’s dangerously delicious! I doubled the recipe and it came out fine, if a little thick. I’ll just add some almond milk if they don’t like the thickness.
I really want to send a jar to my sister who lives away, but it will be more than the 5 days you mentioned. I was wondering what happens to it after the 5 days you recommended? Is it just not as fresh after that?

Can you sub and use flax seeds instead? Without the seeds it won’t have that coquito thickness.

I tried your recipe in a small batch using 1/2 a can of coconut milk. Silly me, I didn’t decrease your chia egg amount and I ended up making a coquito batter (lol).
Any advice on how to salvage the batch? Other than the consistency it has a crisp, fresh flavor.

I’ve only ever made the regular versions, but my lactose-intolerant friend wanted to be able to have some, so I’m trying your recipe! One question, how long does is stay “fresh” or “good” in the fridge? I need to make it in advance but I”m not sure how many days in advance is okay. 3 or 4 days is ok?

Making this now for a party. I guess it was a mistake to try something new. Like others, the condensed milk is brown as soon as you add the syrup. Not sure how this will lighten… Going to have to go to the store to get more ingredients to make a second batchwith a different recipe..

Thanks for sharing your recipe! I’m wondering if the brand of syrup or coconut milk make a difference…mine turned dark as well almost immediately. I used Goya coconut milk and Signature 100% grade A maple syrup. ..I’m a little sad. It didn’t even reach “warm” and it was already dark. Smells wonderful though.
The maple syrup is what most likely turned it dark. That’s happened to me before when I use different types of syrup but I usually stick with the Trader Joe’s brand and it stays light. It also lightens up as it cools or it should.
Recipe instructions start with “full-fat coconut cream”, then switch to coconut milk. Those are two different ingredients.

You’re so welcome! And I usually hit up a bar around my way, a liquor store and some friends for their bottles. Just be sure to clean them out thoroughly and get tops!

Thank you for sharing your recipe. To make the condensed milk, should I use 2 cans of coconut milk or coconut cream? The 7th paragraph reads 2 cans of full fat coconut cream. However, the recipe reads coconut milk.

Hi Nicki, Coconut milk and coconut cream in a can are basically the same thing but I totally get where it can get confusing. You can use two cans of full fat coconut milk to make the condensed milk.😊

I’m glad you liked the recipe! Ok so two things: One, it does get thicker as it cools. Second did you add the condensed coconut milk from the fridge with coconut milk (from a can) that was room temperature?
Yes I did, but my condensed coconut milk from the fridge might not have been cooled all the way before I added the coconut milk.

Instead of adding the 3rd can of coconut milk, try using almond milk for that last step. It will thin it out some. It will still be thick however but shouldn’t be mousse thick. And do make sure your condensed milk is cold all the way through. Keep me posted. 😊

Thanks so much for this recipe! Every year I make coquito for my family around the holidays! I recently switched to a vegan lifestyle and was thinking about making a vegan coquito drink but you did all the hard work for me! Only thing is I tried your recipe and for some reason mine came out almost a dark brown. I know it’s from the spices but can you think of what I did wrong? I am going to attempt it again because I know it’s something I did, i just need to figure it out.
Hi Heather! You’re so welcome. I’m not sure exactly why it turned dark brown, hmmm. What color rum did you use? Even with adding in the spices it shouldn’t turn dark brown. Usually the spices settle at the bottom and I have to give it a quick shake before serving.
I did use Bacardi {clear}. So I’m not sure exactly why. I know whenever I’ve made it before {non vegan} that never happened. Maybe I burnt there milk or something lol! I have no idea! I will definitely try again. Thanks for your reply!

I think I almost started to cry when I read this (almost being the key word). I have been vegan for about 8 months now and suffered through the christmas season with a heavy heart because I couldn’t have any coquito. That is all over now! Screw the wait, I am making this today and will be hitting it with the 151. The other thing I do for mine, is that I crack open some fresh coconuts, carve out the meat, and throw it in the blender so each and every sip you get nice shreds of juicy coconut meat.
I am starting to rant haha, thank you for the this amazing recipe and the inspiration to not let my newly adopted lifestyle hinder my ability to enjoy the pleasures of my Puerto Rican Heritage.
Awww Andres I totally feel you on that. You don’t have to give up tradition or heritage being vegan. All you have to do is swap out a few ingredients for better ones, cruelty free and even healthier. Yes, when making the transition over to veganism some things require adjustments as not everything tastes exactly the same but you will get use to it and find what you like and don’t like.
