Mini Trio Chia Puddings

Hey Hey Hey! Where ya going and whatcha been doing? Ok so here’s the deal, I love coconuts. I eat something with coconuts often. Not only  are they super good for you on so many levels but they are so versatile you can pretty much use them for anything. Things like coconut milk, water, cream, icings…the list goes on and the possibilities are endless.

So here you have 3 different varieties of my everyday love Banana Coconut Chia Pudding.
All are made with the same base ingredients except in each one I added an extra ingredient to make them different. Who doesn’t love options! I mean, really. And wait the kicker is…They are all made with a superfood. It’s like just when you think this can’t get any better it does.

1 c coconut milk (fresh or store bought)
1/2 c rolled oats (optional)
1 tbsp shredded coconut
2 tbsp chia seeds (if you are opting out the rolled oats use 3 tbsp)
1 tsp vanilla extract
1 mashed banana
1 stevia packet or 1 tbsp maple syrup for sweetness (optional)


  1. Place all ingredients in a mason jar and shake really well.
  2. You can add 1 tbsp of the super foods Cacao Powder or 2 tsp of Maqui Berry Powder.
  3. Store in the fridge overnight or at least 4 hours before serving.
  4. Enjoy!
